Tuesday, January 27th, 2026 // The Tsukiji Cut: Live Bluefin Tuna Breakdown with Kaisen Sushi

For one night, we brought the electric rhythm of Tokyo’s Tsukiji fish market to Montrose.

At Traveler’s Cart, the patio transformed into a live stage as the team from Kaisen Sushi led a full Bluefin tuna breakdown for our guests. From the first precise cut to the final reveal of prized sections of toro, the energy was magnetic. Phones were out, cocktails were flowing, and the crowd leaned in for every slice.

The evening began outdoors, where guests gathered around the breakdown table to watch the craftsmanship up close. There is something powerful about seeing a whole fish honored in real time. It slows you down. It makes you appreciate the skill, tradition, and respect behind every bite.

Once the breakdown concluded, the experience moved inside. Sushi chefs immediately began preparing curated selections of sashimi and nigiri using the freshly cut Bluefin. The dining room buzzed as guests mingled from table to table, comparing favorite pieces and making new friends along the way.

This was designed as a come and go style evening. No rigid program. No formal seating charts. Just great food, great drinks, and space to connect. Find a seat. Grab a Japanese inspired cocktail or mocktail. Start a conversation. Go back for another bite.
